Yes, but remember, you shouldn’t cook with any alcohol you wouldn’t normally drink. We got hit with that in Year 1 Culinary Basic at my college.

its his hair. if you think he looks bad, he might think he looks fine. if you don’t like it, than stop watching, or just listen to him.

Edamame is great… But ALTON!!! It isn’t the only plant food with a complete protein! Try Quinoa…. But that’s another show, right?

frankly if you are making a sauce it doesnt matter. All the alcohol is there for is to pull alcohol soluable flavours out of the food. Its as simple as that. The fruitiness doesnt matter. Just watch some of ABs tomatoe episodes.

You’re wrong in my opinion. There are alot of things that you could use any alcohol with, but sauces is NOT one of them.

the reason you would need to have a good wine for is if the sauce is going to be used in a stand alone sauce but if the reason you are using the wine for is to pull the flavours from tomatoes or similar alchol soulable flavours then why waste money on a good wine. But you have to watch some videos of AB to understand the reasoning. I do belive it was his canned tomatoe pantry raid episode.

I found the episode. Its the Musell show from season 3. Here is the episode transcript. “You see, I don’t think it’s got to be great. In fact, unless I’m planning to reduce it down into a glaze or a pan sauce I never lay out more than one dead Lincoln for cooking wine. After all, what do I really want out of it? A little acidity, a little fruitiness, and just enough alcohol to extract the alcohol soluble flavors from things like the tomatoes.”

Ah ok. My mistake. I thought you were talking about a made-in-the-pan sauce. I have watched alot if not most of his videos, but I have not heard of his canned tomatoe pantry raid episode. ill have to go watch it :)

I love dry roasting my own, tastes and smells way better than pre-packed crap. Just soak the edamame, at least overnight (I sometimes add dried garlic, or red pepper flakes to the water), drain em, put em on a cookie sheet, and put in a 350 degree oven, check every 10 minutes, stirring each time you check, they should be done between an hour to an hour and a half. Its worth it!

Actually the risks of soybeans and cancer applies only to people whose health was already compromised, and the honest truth is that the chemical in soybeans which is potentially harmful (An artificial estrogen) is in a low enough concentration that the risk is minimum. As for the decreased sperm count, it actually isn’t that big of a deal. The sperm count is the ONLY thing that the soybeans affect, and unless you eat nothing but soybeans straight up daily, it won’t have a long term effect.

And an added benefit is that doing it by yourself is often cheaper than buying prepacked snacks. Of course never having seen prepacked roasted edemame in the first place, i may be wrong.

How about you give us some sound references instead? Those scientific journals which lead to the soybean health risks, and most of those “Scientific research journals” on tracking down potential carcinogenics are, as far as my experience goes, almost always inconclusive. Most of the beliefs of soybeans potential risk comes from paranoid conspiracy theorists whose brains lead to danger whenever they see a chemical name.

Ignore them completely and stick to what my experience has taught me with studies like that? Sorry, but even if you found scientific research, i honestly refuse to buy it until the FDA confirms it. I’ve heard so much bull coming from studies like that that it’s almost enough to make me think the 9/11 conspiracy theorists are sane. Nothing against you, i just got sick of it after i was told my blueberry yogurt would give me cancer.

I don’t care if it is scientific in approach. Until the research is approved by the FDA, i’m not buying it.

No! Phenylalanine’s one-letter abbreviation is F! P is proline! This is the first time Alton’’s scientific information has not been to my satisfaction. I think I’ll let him go, because he’s such an all-around badass.
